A good salad is a great companion to pizza. This one works so well, you could even put it on top. If omitting the anchovies, add a good pinch of salt instead.

Ingredients

  • ½ cup pitted green olives, finely diced

  • 1 small head, radicchio, finely diced

  • 1 head baby cos lettuce, finely diced

  • ½ punnet cherry tomatoes, quartered

  • ½ small red onion, finely diced

  • 2 anchovies, finely chopped (optional)

  • ½ tsp dried oregano

  • ¼ cup finely shredded flat-leaf parsley

  • 2 tbsp red wine vinegar

  • ¼ cup extra virgin olive oil

  • a pinch of sugar

  • ¼ cup freshly grated parmesan

  • freshly ground black pepper, to serve

Method

  1. Combine all the ingredients except the pepper and parmesan in a large non-reactive bowl.

    Toss well and transfer to a serving bowl. Scatter with the parmesan and grind plenty of black pepper over the top to serve.

    Serve alongside my 'grandma' pizza with salami and capsicum.
