A recipe from the Good Food collection.
4 1/2 large or 6 small green apples
2 1/2 cups (600 ml/20 fl oz) water
2 tablespoons lemon juice
1/2 cup (125 g/4 oz) sugar
4 whole cloves
4 sprigs fresh mint
6 leaves fresh basil
cream or yoghurt, for serving
1. Peel apples, remove cores and cut apples into quarters. Place water, juice, sugar, cloves and mint in a pan. Stir over low heat without boiling until sugar dissolves. Bring to the boil.
2. Add apples to pan. Cook over low heat with lid tilted to let steam escape, for 10 minutes or until apples are soft but not breaking up. Add basil. Remove from heat, set aside until cold.
3. Carefully remove apples and place in a bowl; pour syrup through a sieve over top of apples. Serve chilled with berries and cream or yoghurt.
