Ingredients

  • 1 tsp soy sauce

  • 2 tsp mirin

  • 1 tsp canola oil

  • 3 drops sesame oi

  • l1 tsp grated ginger

  • 12 large cooked prawns, peeled and tails removed

  • 1 clove garlic, peeled

  • 4 slices sourdough bread

  • olive oil

  • 2 avocados

  • 1 tbsp finely chopped chives

  • 1 tbsp mayonnaise

  • 1/2 tsp wasabi paste

  • 1 tsp sesame seeds

Method

  1. To make the dressing, place soy, mirin, canola oil, sesame oil and ginger in a bowl and mix well. Stand in the fridge for one hour.

    Strain to remove ginger. Reserve. Cut the prawns in half lengthways, remove entrails. Cut garlic in half and rub over bread. Drizzle lightly with olive oil and grill until both sides are golden.

    Place avocado flesh in a bowl and - using a fork - mix with chives, mayonnaise, wasabi and sesame seeds. Spread on bread and lay six prawn halves on top of each sandwich. Spoon a little dressing over prawns before serving.
