Pumpkin fritters

Ingredients

  • 500g pumpkin

  • 2 large eggs

  • 1 clove garlic, minced

  • 3 tbsp chopped parsley

  • 4 level tbsp plain flour

  • 4 tbsp grated pecorino or parmesan cheese

  • Salt and pepper

  • 500ml extra virgin olive oil

Method

  1. Steam pumpkin in pieces in a little water until tender.

    Remove skin and mash flesh with fork.

    In a large bowl, beat eggs then mix in garlic, parsley, flour and cheese to obtain smooth paste.

    Mix in mashed pumpkin flesh. Season to taste.

    In a pan, heat olive oil and form each fritter using 1 tbsp of mixture.

    Once golden, place on absorbent paper. Add salt if necessary and serve hot as a snack or as part of a larger meal.
