Winging it: 25 cracking chicken wing recipes

Chicken wings are the perfect budget-friendly snack food, whichever way you cook them. They're affordable, can be anything from a snack to a full meal, and you can boil, pan-fry, roast, steam or deep-fry them for five minutes or two hours and they'll still be delicious. The secret to wings' versatility is their bones. Cooking on the bone stops muscles from contracting too much and squeezing out their moisture, while the skin also helps stop the meat from drying out. Food columnist Adam Liaw likes to joint wings as it makes them much easier to cook. This is easily done with any kitchen knife, as you should be cutting through the cartilage of the joints rather than the bones. Give it a go. You'll soon work out the right points and angles to get it perfect every time.
