This has the complexity of a good red with a hit of summer sweetness and a refreshing burst of sparkling water.

Ingredients

  • 1 bottle full-bodied red wine (such as shiraz)

  • 1 cup sugar

  • 2 lemons, rind peeled and juice squeezed

  • 1 tbsp red wine vinegar

  • 1 cup blackcurrant cordial

  • sparkling water, summer berries and mint leaves, to serve

Method

  1. Combine the red wine with the sugar and lemon rind and bring to a simmer over medium heat. Reduce the heat to low and cook for about 1 hour, until the mixture is reduced by about half. Add the lemon juice, red wine vinegar, blackcurrant cordial and mix well. Allow to cool, then return to the wine bottle and chill.

    To serve, mix the cordial with sparkling water to taste over ice and garnish with summer berries and mint leaves.
