Ingredients

6 roma (plum) tomatoes

2 teaspoons capers

6 basil leaves, torn

1 tablespoon olive oil

1 tablespoon balsamic vinegar

2 garlic cloves, crushed

1/2 teaspoon honey

Method

1. Cut the tomatoes into quarters lengthways. Cook, skin side down, on a hot barbecue grill plate or flat plate or under a kitchen grill (broiler) for 4-5 minutes, or until golden. Cool to room temperature.

2. Combine the capers, basil, oil, vinegar, garlic and honey in a bowl, season with salt and freshly ground black pepper, and pour over the tomatoes. Toss gently.
