4 handfuls rocket (300-350g)
1 pear, finely sliced
1 lemon, juiced
2 tbsp olive oil
60g shaved parmesan
flaked sea salt
In a medium-sized bowl, add the rocket, pear, lemon juice and olive oil.
Give it good toss and put in a shallow serving bowl.
Add the shaved parmesan and season with salt.
This salad goes well alongside pasta dishes such as chorizo vongole with squid ink pasta.
