12 slices prosciutto
1 rockmelon, cut into 12 large slices, skin removed
1 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
Large handful salad greens
50g marinated feta cheese
Wrap a slice of prosciutto around each piece of rockmelon and place three on each serving plate.
Whisk together the vinegar and olive oil and pour over the salad greens. Toss to coat and place a mound in the centre of each plate. Crumble the feta over the salad and serve.
