This fresh, zingy salsa is delicious with tacos, grilled fish or meat. Jalapeno chillies are sold at markets and supermarkets. If you can't find them fresh, use good-quality pickled jalapenos.
2 medium tomatoes, diced
1 fresh jalapeno chilli, chopped
¼ cup fresh coriander leaves, chopped
1 garlic clove, finely chopped
1 large white onion, diced
2 tsp fresh lime juice
Sea salt
Combine all ingredients in a bowl and toss to combine. Allow the flavours to infuse.
