Good speciality butchers should sell smoked ox tongue. If you don't want to buy a whole tongue, ask for the required number of slices.

Ingredients

  • 1 smoked wagyu ox tongue

  • 1 tbsp lemon juice

  • 1 small celeriac, peeled and finely sliced

  • 4 tbsp good-quality mayonnaise

  • 1 tbsp seeded mustard

  • Sea salt and pepper

  • 4 handfuls watercress, picked and washed

  • Extra virgin olive oil

Method

  1. Peel or slice skin from tongue and slice into 20 thin slices.

    Mix lemon juice with celeriac and stand for 10 minutes. Squeeze out excess liquid, mix celeriac with mayonnaise and mustard and season.

    Serve five tongue slices with a pile of celeriac, watercress, a drizzle of extra virgin olive oil and a little salt and pepper.
