For years, my favourite after-work meal has been a moreish concoction of beans on toast. Time to table? 10 minutes! While my fridge is often embarrassingly bare, I usually have a couple of cans of three bean mix lurking at the back of the cupboard. All you do is throw in some garlic, tomatoes, parmesan and parsley and you have a meal worthy of, well, a chef.

Ingredients

  • 1 tbsp olive oil.

  • 1 tsp butter

  • 1 large onion, sliced.

  • 2 cloves garlic, crushed.

  • 400g tin tomatoes, chopped.

  • 430g tin 3 bean mix, drained.

  • Sea salt and freshly ground black pepper.

  • 2 slices toast (brioche is good)

  • 1 tbsp grated parmesan

  • 1 tbsp chopped parsley

Method

  1. In a saucepan, heat the olive oil and butter, add the onion and cook for a couple of minutes until soft.

    Add the garlic, then the tomatoes and cook gently for 2-3 minutes, then throw in the beans and mix well. Bring to the boil, then turn the heat down and simmer gently for 5 minutes.

    Season to taste and serve on toast, sprinkled with parmesan and parsley.
