Just like stir-fries, salads don't need to combine 20 different ingredients to taste good. Quite the contrary, a few ingredients seasoned well are all you need for a delicious, distinctive salad.

Ingredients

  • 3 cups mixed tomatoes (cherry, heirloom etc), halved or cut into wedges

  • 2 avocados, peeled and cut into large cubes

  • 1 coriander plant, roughly chopped

  • 1 bird's-eye chilli, finely sliced

  • ¼ red onion, finely sliced

  • 1 tbsp red wine vinegar

  • ¼ tsp caster sugar

  • 2 tbsp olive oil

Method

  1. 1. Combine all the ingredients in a bowl and season very generously with salt and black pepper. Gently toss the ingredients together and serve immediately.
