For happy little Vegemites everywhere. With these biscuits it's impossible to stop at just one.

Ingredients

  • 125g (½ cup) butter, softened

  • 1 tbsp Vegemite

  • 190g (1¼ cup) plain flour

  • 120g (1 cup) grated tasty cheese

Method

  1. 1. Combine all the ingredients in a food processor and process to the consistency of breadcrumbs. Add 2-3 tablespoons of cold water just until a dough comes together. Remove from the food processor and knead lightly to form a smooth dough. Roll into a cylinder approximately 5cm in diameter using cling film or baking paper and refrigerate for half an hour.

    2. Heat your oven to 160C fan-forced (180C conventional). Slice the cylinder into ½-cm rounds and place them on a lined baking tray. Bake for 10 minutes until the biscuits are lightly browned, then cool on a wire rack.
