Unapologetically indulgent, this dip will wow your next party guests. It combines chorizo, caramelised onion and cheese. Serve with crusty bread or tortilla chips and expect the bowl to be cleaned out in minutes.

Ingredients

  • 250g chorizo (about 2 dried sausages), finely chopped or pulsed in a food processor

  • 2 brown onions, finely chopped

  • 3-4 sprigs thyme

  • 2 tablespoons butter

  • pinch salt

  • 250g cream cheese

  • 1/4 cup whole egg mayonnaise

  • 1/3 cup grated mozzarella

  • cracked black pepper

  • chopped spring onions or chives to garnish

Method

  1. Gently fry the chorizo in a heavy based frying pan until the oils are released and the chorizo is crispy. Set aside, reserving the chorizo fat in the pan.

    Add the chopped onion to the same pan along with the thyme, butter and a pinch of salt. Fry gently over low heat for 20-25 minutes until a deep caramel colour.

    Place the cream cheese, mayonnaise, mozzarella and the reserved chorizo onion in a mixing bowl. Stir together well with a fork, adding additional pepper and salt if needed.

    Place the mixture into an ovenproof bowl and bake at 180°C for 15 minutes or so, until golden, bubbly and heated through.

    Sprinkle the chopped spring onions or chives on top and serve with crusty bread or tortilla chips.
