A refreshing salad of watermelon and strawberries is one of my favourite fruit combinations.

Ingredients

  • 2 tbsp caster sugar

  • 4 slices of ginger

  • 1 vanilla pod, split in half

  • 1 tsp rosewater

  • 8 slices of watermelon

  • 250g strawberries, sliced into rounds

  • roughly chopped pistachios, to serve

  • natural yoghurt (optional)

Method

  1. 1. Make a light sugar syrup by combining the caster sugar with 125 millilitres (½ cup) of water, ginger and vanilla in a small saucepan. Bring to a simmer over a low-medium heat, stirring until the sugar is dissolved, and continue to simmer until lightly syrupy. Let cool then stir in rosewater.

    2. Arrange watermelon slices on a plate and top with strawberries, and pour over the syrup. Just before serving, scatter over some pistachios. Dollops of natural yoghurt turn this salad into a light summery dessert.
