It says much about owner-chef Hiro Nishikura's food that after 10 years his small, inconspicuous restaurant in Glen Waverley remains one of Melbourne's must-try places for Japanese. Dine contentedly from the a la carte menu at a table, or opt for the chef's rightfully praised sushi selection (omakase). If the latter, you'll prop at the counter and leave the largely seafood procession entirely in the nimble hands of Nishikura and his animated crew. Typically, the degustation-style menu runs to nine courses - two pieces per round - with theatrics (think flashing blades and blowtorch) and helpful direction, such as when not to add soy. Included might be glistening slices of wonderfully fresh cod with flying-fish roe and a hit of wasabi, melt-away sirloin strip or daikon-swaddled mackerel marinated in sweet vinegar - all over sticky sushi rice. For larger appetites and deeper pockets - the omakase option isn't cheap - there's no need to stop. Sixteen stands as the house record.
