Every aspect of Silo, an impressive zero-waste cafe by eco-artist Joost Bakker and Danny Colls, has sustainability in mind, from the dehydrator that converts the cafe's organic waste into fertiliser to the no-rubbish policy and food served in recyclable glass jars. On the tiny menu, the few organic, biodynamic dishes might include an amazing superfood salad of lentil, farro and quinoa with foraged dune spinach; saucy oyster mushroom risotto with hand-churned butter; lush celeriac soup; or 62-degree eggs. It's a skinny, 20-seater space; eat at the communal table by the galley kitchen. Top food, great set-up.
