Uncle, a new split-level Vietnamese diner with an ex-Dandelion chef, crashed open under a wave of anticipation. The bar downstairs is a moody mix of charcoal-grey and red, while upstairs is bright and breezy with an adjoining bamboo-fringed courtyard. Small bites include spring rolls with grated egg and fresh herbs, crisp soft-shell crab on butter lettuce, and fried chicken wings served with a bottle of Maggi seasoning. Spring Bay mussels tingle in a yuzu broth, and sweet potato fries are an alfresco beer snack made in heaven. Friday and Saturday nights can be frenetic so dine off-peak for a sweeter experience.
