Urbane's minimalist, inner-city chic dining room is on the A-list of Brisbane restaurants. Although a la carte is available, degustation is recommended. A slow dance through seven or 12 courses can surprise with texture, taste and presentation. Soft aromas lift from gently smoked scallop while toasted quinoa gives crunch opposite silken carrot jelly. Batons of eggplant and black cardamom-ashed tajima beef is exceptional; sous-vided (just) and teamed with pungent black garlic puree, chanterelles, vibrant green chlorophyll and fossilised carrot. To wind down, single origin chocolate comes in many guises; a snap-frozen tangle of noodles, orbed, bubbled and spiralled, and as raw cocoa ice-cream. Urbane's sommelier will match dishes from an inspired and globally roaming wine list. As we went to press senior chef Brenden Gradidge was covering the head chef position following the departure of Kym Machin, but stay tuned.
