Ingredients

  • 1 whole rockmelon, peeled, deseeded and cut into chunks

  • 2 mangoes, peeled, deseeded and cut into chunks

  • 3 tbsp caster sugar, or to taste

  • about ½ cup freshly squeezed lime juice (about 4 limes)

  • mint sprigs

Method

  1. 1. Combine the fruit pieces, sugar and lime juice in a high-speed blender and blend to a smooth puree. Add about 1 litre of water (or to taste) and blend to combine. Strain the mixture through a medium sieve, place in a serving jug and refrigerate for at least 1 hour. Serve over ice with a sprig of mint and a slice of lime.

Adam's tip Cleaning is an important part of keeping a party on an even keel. Set up a dishwashing station in the laundry and brief your family to whisk away empty bottles and dirty plates as soon as they see them.
