Another easy-drinking concoction perfect for spring, this drink makes use of readily available fresh cumquats and umeshu, a plum wine from Japan.
45ml umeshu plum wine
3 cumquats, cut in half
sparkling wine to top
cumquat leaves, blueberries and powdered sugar to garnish
Muddle the cumquats in the bottom of a highball glass until they release all their juice.
Add umeshu, half fill the glass with crushed ice and stir.
Fill the rest of the glass with crushed ice, and top with sparkling wine.
Garnish with cumquat leaves, blueberries and a dusting of powdered sugar.
