Ingredients

4 mint leaves

45mls white rum

80g diced fresh pineapple

4 lychees, peeled and seeded

15ml pineapple juice

15ml lime juice

15ml sugar syrup

1 cup crushed ice

pineapple leaves

mint sprig

Method

1. Place the mint, rum, pineapple, lychees, pineapple juice, lime juice and sugar syrup in a blender.

2. Add the crushed ice and blend until the mixture is the consistency of shaved ice.

3. Pour into a large chilled cocktail glass and garnish with pineapple leaves and a sprig of mint.
